Kitchen Manager

MY Old Kentucky Dinner Train in Bardstown, KY seeks an experienced Kitchen Manager to assist the Executive Chef in the daily operations of the kitchen, including menu development, inventory, purchasing of supplies and cost control. The Kitchen Manager will be responsible for overseeing the activities of the kitchen staff and monitoring food production and presentation in the absence of the Executive Chef.

Responsibilities:
oUnderstanding of federal, state, and local food sanitation regulations.
oCulinary Arts degree or related training preferred.
oCoordinates and participates in the activities of hiring, training, and managing personnel in the kitchen.
o4-6 years of kitchen management experience in a casual and/or fine dining full-service restaurant.
oManagement of 3-6 people.
oFamiliar with a variety of the field's concepts, practices, and procedures.
oMust be able to work under time constraints.
oRelies on extensive experience and judgment to plan and accomplish goals.
oNights, weekends, and holidays may be required.
oPerforms a variety of tasks.
oLeads and directs the work of others.
oA wide degree of creativity and latitude are expected.
oReports to an Executive Chef.
oConduct regular inspections of the entire kitchen/dishwashing areas.
