Position Summary

The primary purpose of this position is to maintain sanitary conditions of all tableware, pots, pans, steam lines, ovens, and other dietary equipment; set up patient trays attractively, conveniently and correctly, in compliance with Sanitary Code of NH (and other set-ups for functions); to assist the cook in preparing salads, sandwiches, desserts, and to maintain the salad bar. Must ensure that all duties are completed on schedule.

Qualifications

Must be a high school graduate or obtained a GED certificate.

Must have the ability to speak and read English, and be able to follow verbal directions.

Must know how to operate dishwasher and other kitchen equipment.

Must have full knowledge of tray setting procedure.

Should know how to read Dietary manual.

Essential Functions of the Job
Required skills and competencies. Has competency checklist been completed with all competencies met (i.e. job skills / knowledge, equipment knowledge)?
Prepare servings according to portion control, covering all food items - NO EXCEPTIONS - and labeling all special foods with special food tape (i.e. diet, etc.).
Prepare breakfast, lunch, and supper items according to tally sheets and according to procedure (do add-on list as given by office personnel).
Set up patient trays for meals, ensure that menus are correctly filled, that all items used are clean and sanitary.
Answer the telephone when office personnel are not in the office.
Serve lunch to late staff at noon.
Monitor daily temperatures of dish machine to ensure appropriate temperatures of wash and rinse cycles.
Daily reading of sanitizer in the pot sink utilizing the test tape.
Delivering and picking up of tray carriers before and after meals.
Wash, sanitize, and polish tray carriers.
Clean cafeteria (making sure to restock items in drawers, salt and pepper shakers, coffee cups, creamers, etc.).
Push/pull loaded tray carriers throughout the hospital.
Work in the dish room during meal hours.
Manages time effectively to ensure that deadlines are met and that personal priorities support organizational objectives.
Help prepare needed items during the meal hours.
Assist in preparing and delivering Senior Meals.
Scrape dirty dishes prior to washing, pre-rinse all dishes before putting in dishwasher. Make sure to keep waste area free of items that could damage the machine. Keep racks clean and in good repair. Clean dishwasher out after each meal.
Perform other duties as specified by the Manager of Dietary Services and/or the Chef (i.e. preparing fresh vegetables, cleaning the oven, taking care of stock, cleaning the walk-ins, etc.)

The check will bounce and the victim is left responsible.
